1 28-33 oz. canned tomatoes (Italian style is best; can be crushed or whole, cut up)
In a very large measuring cup (I use a 2-quart Pyrex) or microwave-safe bowl, heat oil for 2-3 minutes.
Add garlic and onions and cover tightly with plastic wrap. Microwave on high for 5 minutes until onions are all soft-sautéed.
Pour in tomatoes and basil; cover tightly with plastic wrap and microwave on high for 5-6 minutes. Uncover and add pepper and salt if using. Serve over pasta or in your favorite recipe calling for tomato sauce.

1-3 cloves of garlic finely chopped or smashed
1 thinly sliced onion
1-3 tsp. olive oil
Fresh basil, chopped, to taste (1/2 to 1 bunch)
Freshly ground black pepper to taste (optional)
Salt to taste (optional)
This is a really quick and easy sauce you can make from canned tomatoes, onions, garlic, and fresh basil and the microwave. It is my version of Barbara Kafka's recipe in "Microwave Gourmet."
