Green Sauce, Italian (Salsa Verde) (P, TNT)

Yield: Approximately 1 cup

1 tbsp. fresh parsley, finely minced
1 tbsp. fresh basil, finely minced
1 tbsp. fresh dill, finely minced
1 tbsp. fresh scallions, finely minced
1 tbsp. fresh celery leaves, finely minced
1 tsp. of large capers, chopped finely
Several green peppercorns, crushed well
1/8 tsp. garlic
1 tsp. of any fresh herbs available (optional)
3/4 cup of mayonnaise

Mix all ingredients together. Serve with warm or cold fish.

Poster's Notes:
For the optional herbs, I would suggest tarragon, or oregano, or thyme.

This sauce can be a substitute for Caesar Salad Dressing. It's especially nice on salmon.

You can use low fat mayonnaise.
