3 tomatoes, seeded and cubed
Combine vegetables in a large bowl, sprinkle with the remaining ingredients, toss well and chill for about 30 minutes before serving to allow the vegetables to absorb the flavors. Garnish with reserved thyme sprigs before serving.

2 to 3 cucumbers, seeded and cubed
1 small red onion, chopped (bunch of green onions can be substituted)
2 tablespoons olive oil
Fresh lemon juice, to taste
2 to 3 tablespoons za'atar, or to taste
Salt and pepper, to taste (probably will not need much salt)
Fresh sprigs of thyme, some chopped, some for garnish, optional
Try adding za'atar to a chopped vegetable salad. These types of salads are "free-form", amounts can be adjusted to whatever you have on hand or what your family likes. The other night I added some fresh lemon thyme from the garden, which gave it a wonderful smell. Serve with pita bread, white cheese (also try some za'atar on cottage cheese or labane, add harissa and you won't be able to stop eating) and another couple of salads for a light summer dinner.
