2 tbsp. Dijon mustard, extra strong
3 tbsp. red wine vinegar
2 tbsp. water
1 cup vegetable oil
dash Worcestershire sauce
2 large bunches well-washed spinach, torn in pieces
3/4 cups mushrooms, sliced
1/2 cup mozzarella cheese, grated
1/2 cup chopped egg
1/2 cup mandarin oranges, drained (from can)
1/4 cup pine nuts
Put mustard, vinegar, water, oil & Worcestershire sauce in a jar. Tighten lid. Shake vigorously, until smooth & creamy.
Put spinach in salad bowl. Top with remaining ingredients.
Add dressing from jar. Toss; serve immediately.
