Lemon-Mint Vinaigrette (P, TNT)

Yield: 1 cup

1/2 cup fresh lemon juice
peel of half a lemon, diced
1/3 cup mild flavored oil
3 tablespoons honey
2 tablespoons mint (I used lemon balm), finely chopped

Mix all ingredients very well and refrigerate at least two hours. Serve on fruit salad.
