2 tbsp. light or no-fat mayonnaise (we prefer light salad dressing)
Whisk together mayo, vinegar, mustard, garlic, salt and pepper. Gradually whisk in oil.

Tastes good on romaine lettuce. Sometimes we cube up some roasted chicken and add croutons to make it into a meal.

My 13 year old daughter has become very proficient at preparing this dressing. She likes to use a hand (stick) blender rather than mixing it by hand in a bowl.
