French Dressing, Mild Vinaigrette (D/P, TNT)

Serves: Approximately 1/2 cup

1 tbsp. vinegar
5 tbsp. olive oil
1/2 tsp. Dijon mustard
1/2 tsp. salt
Herbs such as parsley, cilantro, chives, dill (optional)
1 tbsp. Roquefort or other blue cheese (optional)

Mix the vinegar with the salt and mustard. Add the oil mix then the herbs.

If using cheese, mix cheese with the salt and vinegar; then the mustard. Then add the oil and then herbs.

Poster's Notes:
I use 1/2 extra virgin oil and 1/2 vegetable or other mild oil.

Don't use more Dijon, or the mustard will take over.
