Dijon Vinaigrette Dressing II (P, TNT)

Yield: approximately 1-1/2 cups

1 tsp. or more of "Moutarde de Dijon" (hot mustard)
cider vinegar, red-wine vinegar; half/half
Vegetable oil (walnut oil if you have)
1 large onion (or 2 smaller), finely chopped
1 bunch of fresh parsley and fresh chives, chopped
1 pinch of fresh or dried savory
2 garlic cloves, finely chopped
Salt and pepper

Combine all ingredients in a covered jar or dressing cruet. Shake until well mixed. Toss with Lentil Salad, Warm (click here for recipe).
