Cucumber Dressing, Creamy (D, TNT)
Source: "The 8-Week Cholesterol Cure Cookbook"
Yield: 1-1/2 cups

1 cup plain nonfat yogurt
1/2 medium cucumber, chopped fine
1 tsp. fresh-squeezed lemon juice
1 clove garlic, minced very fine
1/2 tsp. salt
1/2 tsp. ground pepper

Blend the ingredients, and then store covered in the fridge.

Poster's Notes:
I prefer the taste of homemade dressing over store-bought any day. Here's a healthy, low-fat dressing. You can make this dressing ahead of time and keep it in your refrigerator for several days. It makes a great dressing for any green salad as well as a perfect accompaniment for Middle Eastern dishes like falafel.
