Cilantro Creme (P)
Source: "Yamuna's Table Cookbook"
Yield: 1 cup

1/3 cup tahini (sesame-seed paste)
3/4 cup water
3 tablespoons chopped cilantro leaves
1 small seeded serrano chili, chopped
1/2 tablespoon light sesame oil
salt and cayenne pepper, to taste

Combine tahini, water, cilantro, serrano ,and oil in a blender or food processor; process until creamy. Add as directed to Three-Grain Vegetable Salad (click here for recipe).
