Rice Salad w/Craisins (P, TNT)

Serves: 6

1-1/2 cups rice
1/4 cup soy sauce
1/4 cup sesame oil
Pepper to taste
1-1/2 tbsp. vinegar
2 tbsp. sugar
1 clove garlic, crushed
4 scallions, sliced
1 to 2 red peppers, diced
200g (6 oz.) cashews
1 cup craisins (sugared dried cranberries)

Cook rice. drain and cool.

In small bowl, combine soy sauce, oil, pepper, vinegar, sugar, and garlic. Pour over rice and mix gently.

Add scallions, red peppers, and craisins. Chill for several hours before serving.

Mix in cashews right before serving so that they remain crunchy.
