8 potatoes boiled in the skins, peeled, sliced
On a large platter, layer in order: potato rounds, onion, tomato slices and hard boiled egg slices (on top). Salt and pepper after every layer.
Pour over lemon juice and oil.
Cover, refrigerate and let the potatoes absorb the dressing for a little while before serving.

I learned this easy recipe from my Moroccan mother-in-law. It is one of our favorites! My husband loves this salad on Friday night and my kids like it for lunch on Shabbat!
