Orzo Salad w/Beets (P, TNT)

Serves: 4 to 6

4 medium-sized beets
1 cup cooked orzo (rice-shaped pasta)
10 small pickles, cut lengthwise, and then sliced
A handful of parsley, chopped
1 tbsp. mustard
2 tbsp. sugar (or to taste)

Quarter the beets and cook until soft. Peel and cut into small cubes.

Add the rest of the ingredients and mix well. Refrigerate.

Poster's Notes:
I made a "different" beet salad when I had beets to use up and wanted something other than grated beets with lemon juice and sugar.
