3 cups of couscous (cook according to box)
Mix couscous, chickpeas, mandarin oranges, green onions, red peppers parsley, carrots, and tomatoes together in a large bowl. Set aside.
Combine oil, lemon juice, garlic, mustard, and salt and pepper to make the dressing and add to couscous, mixing well.
Best if let to stand overnight in fridge.

2 cans of chickpeas/garbanzo beans
2 cans of mandarin oranges in a light juice
1 bunch green onions, chopped
2 sweet red peppers, chopped
1/4 cup of chopped fresh parsley (and/or fresh coriander)
4 medium carrots, diced
4 medium ripe tomatoes, chopped
1/3 cup light oil
1/4 cup (or to taste) lemon juice (you may add a bit of orange juice too)
2 cloves of garlic, pressed
1 tablespoon Dijon mustard
Salt and pepper to taste
Measurements are approximate, but you can't go wrong!!
