Orange Almond Salad (P, TNT)

Serves: 6-8

1/2 to 1 head romaine lettuce, in bite size pieces
2-3 celery stalks, diced
2-3 green onions, diced
1 can mandarin orange sections, drained

1/3 cup slivered almonds, toasted
2 tbsp. brown sugar
1/3 cup oil
3 tbsp. white sugar
3 tbsp. white vinegar
1 tbsp. parsley
1/2 tsp. salt
dash of pepper
dash of hot sauce

In a pan over low heat, coat the almonds with the brown sugar. You may need a few drops of water to help melt the sugar. Cool and break up into small pieces.

Combine dressing ingredients in a jar. Shake well and let sit for a while to develop flavor.

Just before serving, dress lettuce. Then add celery, onions, orange and almonds and mix gently.

Poster's Notes: This is one of my most popular salads. I take it everywhere. I think it is the crunchiness of the sugared almonds that makes this so delicious. I usually make a large quantity of almonds to keep on hand. The quantity of dressing is more than enough for 1 salad.
