4 tomatoes, sliced
On a platter arrange the tomatoes, cheese and basil in a circular pattern, alternating between them. Season with salt and pepper and drizzle with olive oil, decorate with top parts of basil sprigs (the small clusters of leaves).
Try not make too long before serving because the tomatoes tend to release water.

1 bunch basil, leaves removed from stems
Salt and pepper, to taste
About 2 tablespoons extra virgin olive oil
I like to make this for buffets because it's a very pretty presentation, and super easy!
