1 red onion, thinly sliced
In a glass bowl, layer onion, tomatoes, cheese, parsley, basil, and pepper. Drizzle oil and vinegar.
Continue layering until ingredients are used up. (I did four layers - one tomato per layer.)
Refrigerate until chilled.

1/4 cup chopped fresh parsley
2 tsp. fresh basil
3-4 cloves garlic, minced
pepper, to taste
2 tbsp. extra virgin olive oil
2 tsp. red wine vinegar, to taste
