1 log goat cheese, cut in 1/2" slices, chilled well
Dip the goat cheese slices first in flour, then in beaten egg, and then in flour again. Heat the oil in a skillet until it just begins to smoke, then slide the cheese slices into the pan and cook on both sides until golden.
Rub the inside of a bowl with garlic and mix together the chopped onion, olive oil, vinegar, and mint. Spoon the mixture onto plates and place the cheese slices on top.
