2 large, green papayas, peeled and shredded
Mix papaya and daikon, chill.
In a small saucepan, combine sugar and water. Bring to a boil, reduce heat and simmer for about 10 minutes or until sugar is dissolved, remove from heat.
Stir in red wine vinegar, fish sauce, chile peppers. Pour sauce into serving bowl. Chill sauce.
When serving, mound papaya and daikon mixture in a large bowl or platter. Arrange peanuts around base and pour dressing over all.
