Kasha Salad II (P, TNT)

Serves: 6-8

2-3 cups cooked kasha (leftover)
4 tbsp. fresh lemon juice (or more to your taste)
2 big tomatoes - cut into small pieces and seeded
1 small cucumber, cut into small pieces (optional)
1 cup green onions, cut into small pieces (including the green part)
1/2 cup finely chopped parsley
2 small garlic cloves, crushed fine
2 tbsp. mint leaves, cut into small slices
2-3 tbsp. fine olive oil
Salt and freshly ground pepper (your taste)

In a big bowl mix all ingredients. Mix, taste and cover. Put in refrigerator for 1 hour at least. Serve and enjoy.

Keeps well for few days.
