Make Salad:
Chop onion and olives, add capers, and mix with couscous mixture in large bowl.

3 cups water
2/3 cups currants or raisins
1-1/2 cup couscous
1 small red onion
1 (10 oz.) jar pimento stuffed green olives, drained
3 tablespoons capers, drained
1/2 cup pine nuts, lightly toasted, optional
2 tablespoons red wine vinegar
2 tablespoons olive oil
1/4 teaspoon garlic powder
1/4 cup dried parsley
In saucepan, bring water to a boil with currants or raisins. Stir in couscous and let stand, covered, off heat for 5 minutes. Fluff couscous with a fork.
Mix dressing ingredients in small bowl with wire whisk. Pour dressing over salad and mix well. Add optional pine nuts and mix well. Serve cold.
