Bake cornbread and cool.
Crumble in a large bowl. Mix in celery, green peppers, scallions, and tomatoes. Add
pimientos, peanuts, and mayonnaise. Mix well and refrigerate 4 to 6 hours.

3 ribs celery, chopped
1 large green pepper
2 bunches scallions and tops, chopped
1 large tomato, chopped
1 jar diced pimientos, drained
1-1/4 cups peanuts
1 cup mayonnaise
