1-1/4 cups pearl barley
3 cups salted water
1/3 cup olive oil
3 tbsp. lemon juice
zest of 1/2 lemon
2 cloves garlic
2 green onions chopped
salt and pepper to taste
2 tomatoes, seeded and chopped
1-1/2 cups diced seedless cucumber
3/4 cups fresh parsley, chopped
In saucepan combine barley and water. Cover and boil, reduce heat to low, simmer about 25 minutes. Drain.
Transfer to bowl and toss with olive oil, lemon juice and zest, crushed garlic, green onions, salt and pepper. Before serving add tomatoes, cucumber and parsley.
