Barley Salad (M/P, TNT)

Serves: 8-12


1-2/3 cups chicken broth or vegetable stock
1-1/3 cups water
1 cup barley
1 cup red/green pepper, diced
1 cup thinly sliced carrot
1/2 cup red onion, diced
1/2 cup thinly sliced radish
1/2 fresh dill, minced
1/4 cup fresh parley

Dressing:
1 large clove garlic
1/2 tsp. salt
1/4 tsp. pepper
2 tbsp. olive oil
3 tbsp. red wine vinegar

Boil water and broth. Add barley, reduce heat, cover and simmer for 40-45 minutes until all water is absorbed. Whisk dressing and add to hot barley.

To serve warm, add vegetables and serve. Or, chill, then add vegetables and serve at room temperature.
