Dressing:
1 large clove garlic
1/2 tsp. salt
1/4 tsp. pepper
2 tbsp. olive oil
3 tbsp. red wine vinegar
Boil water and broth. Add barley, reduce heat, cover and simmer for
40-45 minutes until all water is absorbed. Whisk dressing and add to
hot barley.
To serve warm, add vegetables and serve. Or, chill, then add
vegetables and serve at room temperature.
