Tuna Salad, Shabbat (P, TNT)

3 cans of chunk light tuna in water (or 1 can white tuna and 2 light tuna), well drained
1 cup celery stalks, thinly sliced
1/2 cup red onion, finely diced
1/4 cup of fresh parsley, chopped
3/4 cup of high quality mayonnaise
1 tsp. lemon juice
1/2 tsp. coarse grain mustard
1/4 tsp. ground pepper, freshly ground
Salt, to taste
1/4 cup of any of chopped radishes, sweet red pepper or shredded carrots (optional)

Mix up all the ingredients, add salt to taste only after mixing well and tasting then. Some brands of tuna seem saltier than others. Must let sit in the refrigerator for an hour before eating so that all the flavors blend well. The onion mellows into a sweet component of the salad.
