5 red apples UNPEELED
Chop apples and onion. Immediately, pour juice over them and toss. Add all other ingredients except fish and toss. Season to taste.
For presentation, make a pile of the salad over a serving plate (a dark plate will be nice). Put on top of the pile the fish fillets and serve.

Yesterday, I recreated it for our guests and got rave reviews. My version is very easy to make, takes about 5 minutes, and no fat!

3 to 4 oz. smoked trout filets
2 to 3 tbsp. dry celery (its a herb by McCormick)
Juice from 1 lemon
Salt and pepper to taste
We ate this salad in a hotel and it was simply delicious!
