Salmon, Asparagus, and Potato Salad (P, TNT)

Serves: 4 servings

1 pound small all purpose potatoes (red or white)

Dressing:
1 teaspoon Dijon mustard
2 tablespoon white wine vinegar (balsamic works well too)
1/2 teaspoon dried tarragon leaves
1/2 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 cup olive oil or vegetable oil
2 tablespoon chopped fresh dill or parsley or both

Salmon:
2 6-ounce (175g) salmon steaks
2 tablespoons fresh lemon juice
1/4 cup white wine, light vegetable stock, or water
2 fresh dill or parsley sprigs
1/2 pound (250g) asparagus
Lettuce leaves
Lemon wedges

Make Potatoes:
Scrub and cut into 1" pieces. Combine with 1/4 cup water in a 6-cup (1.5L) bowl. Cover and microwave for 8-12 minutes at high, until tender. Stir or shake once during cooking.

When potatoes are tender, drain off any liquid. Pour the dressing over potatoes. Toss gently to coat completely. Cover and let stand, to cool.

Make Dressing:
Whisk together mustard and vinegar in a small bowl. Add tarragon, sugar, salt and pepper. Slowly whisk in oil. Stir in dill or parsley. Pour over potatoes, as directed above.

Make Salmon:
Arrange salmon steaks in a shallow microwaveable dish with thicker portions toward outer edges of dish. Add dill or parsley sprigs and pour lemon juice and wine over the salmon. Cover and microwave at high for 3-4 minutes or until fish is opaque and firm to the touch. Let stand briefly. (You can also broil, bake, or grill the salmon).

Meanwhile, wash and snap tough ends off asparagus. Cut into 1" pieces; combine with 2 tablespoon water in a 4-cup bowl. Cover and microwave at high, for 2-3 minutes.

When salmon is cool, remove skin and bones from salmon, flake into pieces.

Assembly:
Gently stir salmon and drained asparagus into potato and dressing mixture. Season with salt, pepper and lemon juice to taste. Divide among lettuce-lined plates. Garnish with lemon wedges and parsley or dill.

Poster's Notes:
This makes a wonderful brunch dish... you hardly need anything else with it! Maybe just a good wine! Very light and perfect for summer.
