Fattoush Salad (P, TNT)
Source: My Dad's wife, Doreen
Serves: 8-10

2 large pita breads
Salt and pepper
1/4 cup fresh lemon juice
1/3 cup olive oil
1/2 head romaine lettuce, torn into bite size pieces
1/2 cup parsley, coarsely chopped
4 green onions, sliced
1/2 cup fresh mint, coarsely chopped
1 cucumber, peeled and chopped
3 tomatoes, chopped
1/2 tsp. sumac

Pita Toast:
Toast pitas in 375° F oven until golden and crisp (15 minutes). Let cool. Break into 1/2 " pieces.

For the Dressing:
In a small bowl, mix salt and pepper (to taste) lemon juice and olive oil.

Assembly:
In a large salad bowl, toss lettuce, parsley, green onions, mint, cucumber, and tomato.

Sprinkle sumac and add toasted pita pieces over salad vegetables.

Pour dressing over salad and toss well. Serve immediately.

Poster's Notes:
My Dad's wife makes this Fattoush for our famous Sunday BBQ's... You might have to double this recipe....it is great!
