1 cucumber, peeled and seeded
Cut all vegetables into bit sized chunks.
At this point, I put the mixed vegetables into a storage container and refrigerate. I then take out as much as I feel like eating and put cottage cheese and sour cream into the bowl with the vegetables. Add salt if you want and enjoy.
Poster's Notes:
If you want fewer calories and don't mind the sharper taste, use yoghurt/yogurt. I suppose you could also substitute vegetarian cheese and soy sour cream if you don't want to use dairy.
We never had a name for this dish but since I had my salivary glands removed a couple of years ago, I must eat moist food, so I have been eating lots of what you call Farmer's Chop Suey. I remember it as a lunch for a hot summer's day.

2 to 3 tbsp. cottage cheese
2 to 3 tbsp. sour cream
Salt (optional)
If you can't find containers of sour cream (in London I sometimes have a hard time finding it) then you can use creme fraiche.
