1 big English cucumber, sliced very thin
Scatter some salt on the sliced cucumbers, mix, and put in a sieve for at least a 1/2 hour. Wash in water and let it stand again in the sieve to drain most of the water.
In a glass bowl, warm the vinegar and the water in the microwave. Add the sugar (or sugar substitute) and mix well to dissolve the sugar.
In a bowl, combine all the ingredients, mix well, taste and add some more salt, or sugar to taste. It should be a sweet and sour taste. Refrigerate for up to 8 hours.
