1 package of mixed cabbage and carrots
Make a brine solution made with about warm water and table salt.
Place the cabbage in a large bowl and mix with the brine. Let stand about 20 minutes then drain in colander. Place back in bowl. Mix in the celery, carrots, parsley, and red cabbage. Add the mayonnaise, wine vinegar, pepper, and, tasting often, the sugar or sweetener. Taste and add more pepper, sweetener, vinegar, or mayonnaise as you wish. Chill until serving.
Poster's Notes:
If the package of cabbage contained no red cabbage, you need 1/4 cup finely shredded red cabbage.

1/2 teaspoon black pepper, ground
