Indian Chickpea Salad (P, TNT)

Serves: 4-6

1 can chickpeas/garbonzo/garbanzo, drained
1 bunch cilantro, chopped
1 red onion, chopped
2 tomatoes, chopped
2 cloves garlic
1-2 hot green peppers
1 tsp. cumin
1/4 tsp. cayenne
3 tablespoons olive oil
1 tablespoon red wine vinegar
1/2 lemon, squeezed
salt and pepper

Roast cumin and cayenne together in a small pot over a low flame, shaking constantly so it doesn't burn. Be really careful not to smell it at all because the roasted cayenne BURNS your nostrils.

Mix all together.

Poster's Notes: My family enjoys this salad, but it is spicy. You could leave out the hot peppers and cayenne if too spicy. We eat this with roasted pita.
