Carrot Salad, Moroccan I (P, KLP, TNT)

Serves: 6

8-10 carrots, peeled and shredded
raisins, if desired
1/3 cup honey
1/4 cup lemon juice
1 tbsp. orange flower water (this gives it a more Middle Eastern flavor)

Dissolve honey in lemon juice, add carrots and raisins, mix well, sprinkle with orange flower water and let sit one hour or longer before serving.

Poster's Note:
I make this for Shabbat a lot as it gets better the longer it "marinates."
