Carrot-Raisin Salad V (P, KLP, TNT)

Serves: 6

3 cups grated raw carrots
3/4 cup raisins
1/2 cup chopped nuts (optional)
Mayonnaise to taste (I think I used about 1/2 cup)
Crushed pineapple (optional)

Mix carrots, raisins, nuts, and crushed pineapple (if used). Moisten with mayonnaise. Chill.

I made this for my family's Mother's Day gathering.

I'll throw in my 2 cents because I make pretty much the same salad. I add an 8 oz. can of crushed pineapple, including the juice. I also add orange juice to moisten (1/4 to 1/2 cup or so), and I don't use the mayo.
