Cabbage Salad, Fruited (P, TNT)

1 small head cabbage, shredded, or 1/2 large head
2 to 3 Granny Smith apples, unpeeled, diced
1 large ripe mango, peeled and diced (add any juice to the dressing)
1/4 cup toasted sunflower seeds, or more

Dressing:
1/4 cup light mayonnaise
1 tablespoon honey, or pineapple juice concentrate
1 tablespoon lemon juice
1/2 teaspoon salt, or less

Mix cabbage, apple and mango. Mix dressing ingredients and add to cabbage mixture. Add sunflower seeds before serving.

You can toast sunflower seeds in a dry frying pan, in a moderate oven or in the microwave (or buy them ready toasted). Stir frequently. They should be light to medium brown when done.

Poster's Notes:
This salad is an adaptation of one that a friend of mine makes. She uses caraway seeds in hers, but I decided to try toasted sunflower seeds, and I like the taste better. Amounts are approximate.
