3 medium beet roots, cooked and peeled
In food processor shred coarsely (not sliced) beet roots and apples. Transfer to a bowl. Mix all the ingredients. Taste, and add more
flavouring if you want. Cover and refrigerate.

Keeps very well for a week. Serve as side dish. This recipe my mother gave me about
40 years ago, and, for the
last 40 years I serve it as a side dish with our main meal, nearly every day. Everybody simply loves it, and especially my grandchildren. It is easy to prepare and it is so good for you.:)

Juice from 1 lemon or a little more.....
2 tbsp. full good mayonnaise (you can use low calorie)
3 tbsp. sugar or more to your own taste (you can use sugar substitute)
1/8 tsp. salt
1/2 cup walnuts chopped (optional)
