Bean Salad, Crunchy (P, TNT)

1 pound green beans
1 tbsp. olive oil
2 tbsp. sunflower seeds
1 large clove garlic
4 tsp. herb vinegar
Chopped chives for garnish

Steam the beans until just crisp-tender about 3 or 4 minutes. Or cook in the microwave in a covered casserole for 5 to 10 minutes-depending on how tender you prefer them.

While the beans cook, place the oil in a small skillet with the sunflower seeds. Stir the seeds over medium heat until they are golden brown. Do not over cook. Remove from heat. Push the garlic through a garlic press into the skillet. Stir well. When the seeds have cooled slightly, stir in the vinegar.

In a large bowl, toss the beans with the sunflower seed mixture. Cool, then chill. Garnish with chopped chives before serving.

Note: You can substitute sesame seeds for the sunflower seeds.
