With all this discussion about honey cakes, here is a tip I discovered that I find useful.
I mix the oil, honey and coffee in a 2 cup measuring cup, I heat the honey for about 1/2 minute in the microwave and use the strong coffee warm. The oil, which I put in the cup first, coats the cup so everything just pours out into the cake mixture when needed with no honey sticking to the cup.
If you are using a whole jar of honey for the recipe, so don't need to put it in the cup. Use the warming trick for pouring it and it comes out rapidly and quite completely. I discovered this when making my imber for Pesach and I used to stand there with upside-down jars of honey waiting for them to drain. That had also been my job when I was a child and we made the imber at my Aunt Martha's.
