1 tbsp. oil
Heat oil in pan. Add onion and sauté over medium heat for 3 minutes. Add tomatoes, zucchini, green pepper, and salt and pepper. Cover and simmer 5 minutes.
Add rice and water; cover and cook on low 20 minutes.

2 tomatoes, chopped
2 lbs. zucchini, peeled, cut into 1" thick slices
1 green pepper, seeded & chopped
Salt and pepper
1/4 cup raw rice
1/2 cup water
This is a very simple and quick side dish for our fresh produce theme.... There is only 1/4 cup rice because the emphasis is on the vegetables & not the rice.
