2 tbsp. oil
Heat oil in saucepan and sauté onions until wilted. Add rice and stir to coat.
Stir in orange juice and seasonings. Bring to a boil and simmer, covered, for 25 minutes.

1 onion, diced
1 cup rice
2-1/2 cups orange juice
1 tsp salt
1/8 tsp. ginger
1/8 tsp. cinnamon
I have made it both using all orange juice and half OJ and half water. Each way is yummy, depending how sweet a rice you enjoy. I always end up adding 1/2 a cup to a cup of water during cooking and have doubled this recipe with no problems whatsoever. It's a big hit and very easy.
