3 cups pareve
chicken broth
3/4 cup lentils,
uncooked
1/2 cup brown
rice, uncooked
3/4 cup chopped
onion
1/2 teaspoon
sweet basil
1/4 teaspoon
oregano
1/4 teaspoon
thyme
1/4 teaspoon
garlic powder
Blend all together in a crockpot and cook on low, six hours or so. Can be baked at 300°F for 1-1/2 hours.
Top with 1/2 cup shredded cheddar cheese the last 20 minutes in the oven.
Poster's Notes: I find that if I double it up, add 1/2 cup of chopped green pepper and a head of cauliflower or a bunch of broccoli, I have a hearty meal for six, including my picky 4-year-old. My one-year-old goes crazy for this. I have made this a few times in a crockpot. Dead simple. Rice is cooked perfectly for me. I double this recipe and it works just as well. - Al
