Brown Rice w/Honeyed Apples (P, TNT)
Source: "The Thirty Minute Kosher Cook"
Serves: 4

1 cup brown rice
2 tbsp. olive oil
2 peeled apples, cored and diced
1/4 cup honey
1/2 cup toasted walnuts
1 tablespoon orange zest

Prepare rice according to package directions. Heat the oil. Add apples and honey. Simmer until apples are just tender, about five minutes.

Toast walnuts by baking at 350°F for five to ten minutes. Add rice, walnuts, and orange zest to apples.

Poster's Note:
Personally, I would omit the nuts. The overall texture is so smooth and creamy. The nuts just did not seem to fit. If you do not eat nuts on Rosh Hashanah, you may want to try this recipe without the nuts. It is a unique take on the apples and honey theme of that season.
