Barley Fiesta Casserole (D/P, TNT)

Serves: 8

2 cups barley, cooked and drained
1 to 2 16-oz. jars chunky salsa, either hot or mild
1 can corn, any size, drained, or another type of bean instead of corn
1 cup black beans, drained and rinsed
Cheddar cheese, optional topping

Mix all together, except cheese and put into 9"x13" baking pan. If you are using cheese, top generously. Bake for about 35 to 40 minutes or until heated through.

Serve with green veggie and enjoy!

Poster's Notes:
Here is another veggie friendly meal. It can either be vegan or lacto if you choose to use milk based cheese as a topping.
