2 cups chopped Roma type tomatoes
Chop all vegetables and herbs; combine in a bowl.
Add vinegar and lemon juice, salt and pepper. Toss together and serve immediately. Garnish with mint sprigs.

2 cups chopped zucchini
1 medium red onion, chopped
A handful of green onions
Juice of 2 lemons
1 tbsp. garlic wine vinegar or regular wine vinegar
1 clove of garlic, chopped
A handful of fresh garden mint, chopped (spearmint, pineapple, apple, lemon, lime, ginger or a mixture of all)
A couple of sprigs of oregano or marjoram, chopped
Salt and pepper to taste
Mint does grow in all those flavors, I used a mixture of spearmint, pineapple mint, and gingermint.
