Relish, Sweet Onion Pepper (P, KLP)
Source: Rock Springs Sweet Onion Festival Cookbook, 1992. Original recipe from Cathy Dorsey, New River, AZ
Yield: 3 to 4 pints

1 quart sweet onions
2 cup red bell peppers
2 cup green bell peppers
1 cup sugar
1 quart vinegar
4 tsp. salt
1 cup chopped cabbage

Chop onions and peppers finely. Combine all ingredients and bring slowly to a boil. Cook until slightly thickened.

Pour into hot sterile jars. Fill jars to within 1/2" of the top. Seal.
