Relish, Olive I (P, KLP, TNT)

1 cup large green olives (with stones)
1 onion, finely chopped
1 clove garlic, finely chopped
olive oil

Drain olives and make sure they have a "slice" around their middle.

Put olives, onion and garlic into a smallish pot, and cover with water. Float just enough olive oil on the water to form a film all over. Simmer for about 2 hours, or until olives are very soft. Cool and store in the fridge.

To serve, drain the olives, and watch them disappear!
