Relish, Horseradish Beet (P, KLP, TNT)

Yield: 1 quart, Serves: About 30

2 (8-ounce) cans sliced beets, drained (2 cups)
1 small onion, peeled
1 (4-ounce) jar prepared horseradish (1/2 cup)
1/2 cup granulated sugar
1/2 cup apple cider vinegar

Using shredding blade of food processor (or manual grater), coarsely shred (do NOT puree) beets and onions into 2-quart mixing bowl.

Add remaining ingredients. Stir with wooden spoon until well-combined.

Refrigerate overnight. Store in tightly-covered container in refrigerator for up to 3 months.

This is a nice condiment for horseradish lovers.
