Relish, Cranberry Mango (P, KLP, TNT)

Yield: 2 cups

1 cup fresh cranberries
1 large mango
3 tablespoons red onion, finely diced
1 tablespoon jalapeno pepper, minced
1/4 cup cilantro, coarsely chopped
1/4 cup fresh lime juice
1 tablespoon honey
1 tablespoon ground pepper

Simmer cranberries in water to cover until they pop, about 10 minutes Drain.

Peel the mango; seed and coarsely chop.

In a medium bowl, combine cranberries with mango, onion, jalapeno, cilantro, lime juice, and honey. Season to taste with freshly ground pepper.

Cover; refrigerate for up to 1 day. Bring to room temperature before serving.
