Relish, Cranberry-Ginger II (P, KLP, TNT)

Serves: 6 to 8

1 cup sugar (superfine if possible)
1 orange with peel, cut in eighths
2 small penny-sized pieces of crystallized ginger, chopped in tiny pieces
1 8-oz. can crushed pineapple packed in its own juice, drained
1 bag cranberries

Place the orange, ginger, sugar, and cranberries in processor and pulse until orange is blended with crushed cranberries. Add pineapple and pulse just to blend pineapple into mixture. If mixture is dry, add 1/4 cup of pineapple juice.

Note: If you use pineapple packed in heavy syrup, reduce sugar to 1/2 cup. Taste and add more sugar if necessary.

Poster's Notes:
This freezes well and also is great mixed with a large box of red (any flavor) gelatin dessert.
