2 cups coarsely shredded cooked beets
Combine all ingredients in a small bowl and blend well. Chill thoroughly.

2 tbsp. red wine vinegar [I used balsamic]
1 tsp. sugar
2 tbsp. Dijon mustard
3 tbsp. vegetable oil
Salt and pepper to taste
I tried this recipe last week. I got it from somewhere in space, cyber, that is. It was nice, but needs to marinate for at least 24 hours before eating so that the flavors can more fully develop. My notes in brackets.
